As new updates continue to be released, and as servers have to wait to update, there's only one way to play: change your Minecraft version to whatever the current server version is. You can do this simply by doing the following:

Open your launcher, and click on this in the corner:

Then it'll bring up this menu, you'll need to click on "Launch options."

It'll bring you to something like this. You'll need to hit "Add new":

It'll bring you to this (minus the tubular name,) where a version is listed. Currently, the latest version is 1.13:

Click on the menu that says "Latest release" and it'll open something similar to this:

Choose whatever version the server is currently on (currently, it's on 1.12.2) and press save:

Then you should be able to go back to your main menu and it'll be in this pop-up menu:

Choose the current server version and you should be able to log on!

Also, if you have OptiFine downloaded, you can just keep using your OptiFine profile since that doesn't auto-update like "Latest release" profile. Then, when the servers update to 1.13, you can just install OptiFine 1.13 and it will run 1.13 when you restart your game. However, if you do have OptiFine, you most likely already know how to change versions anyways.
